A distinction is drawn between two different categories of food ingredients:
- energy delivering nutrients
- essential nutrients
To the energy delivering nutrients count fat, protein and carbohydrates.
To the essentials count vitamins, mineral nutrients, organic acids, sterines, glycerol, polyvalent alcohols as well as particular amino acids and fatty acids.
